  • The Brickhouse Bar and Grill will be opening for business in Brookfield's Plaza (next door to Reeltime Cinema), and Executive Chef Shawn Moore—not to be confused with Shawn Moore at Brookfield Heating and Cooling—is determined to prepare menu items that will leave Brickhouse patrons feeling good all over.
    "I just want my food to make people smile," entices Moore. "I cook a little bit of everything, but regardless of what I prepare to serve, a pleasing flavor is what's important to me."
    And the Brickhouse menu promises to be as expansive as the floor space in Brookfield's newest restaurant, which will seat almost 200 and include a dance floor.
    Offerings will range from finger food such as burgers and smoked chicken wings to prime rib and hand-cut Angus steaks.
    "We'll offer a little bit of everything from the local and seasonal to more exotic dishes that will please the palate any time of the year," explains the Brickhouse Executive Chef. "Everything will be cooked from scratch; I don't work with processed ingredients."
    Chef Moore says he will have something for everyone, from those who are in the mood for something new and different to patrons who tend toward the tried and true. Brookfield's new culinary artist describes a 'crispy and delicious' smoked salmon spring roll that may just become one of the house favorites.
    Originally from Leawood, Kansas, Chef Moore attended Johnson County Community College where he earned a degree in Culinary Arts. He also completed an American Culinary Federation-approved apprenticeship program, with most of that experience being accumulated at the Sheraton Hotel in Overland Park, Kansas. "I also attribute a lot of my success to my mentor, Executive Chef Gary Hild," adds Moore.
    Vowing to provide tasty cuisine and excellent customer service, Chef Shawn Moore regards his employment at Brookfield's Brickhouse Bar and Grill as "the beginning of the rest of [his] professional life." Here's to good first impressions and great food!
